As a bartender I always have to prepare fresh fruit for my drinks, but it is so time consuming to do it at the time when I need it. I would like to pre-cut the fresh fruit but I am worry that the fruit will turn bad or being oxidize. How do I keep the fruit dice fresh and safe to consume?

How to prevent fresh fruit (e.g. apple, banana) from oxidized?
There is a product called "Fruit Fresh" that is normally in the baking aisle. You can put on apples and bananas that start turning.
The old fashioned way was to use an acid from any citrus fruit. Sqeezing lemons, limes, and oranges over your fruit will work.
Any of these solutions, though are short-term. It will only keep them from oxidizing for a day at the most.
One way to keep your fruit from looking fresh could be to make fruit ice cubes. You could freeze bananas and apple slices in ice cube trays and just slip them into the drinks. That way you can always have them on hand. There are many silicone molds in a myriad of shapes to accommodate chunks of fruit. You can add water or even some liquor to the trays to freeze.
