when I make a fruit cake the fruit is always at the bottom of the cake, how can I get a even mixture?? please help

Either your batter is too thin, or too warm before your fruit mixture is added.
Refrigerate your batter for at least 30 minutes before adding the fruit. The batter should be thicker.
If chilling the batter doesn't thicken, then the next time you make it, you need to add more flour and eggs. Flour will thicken it, and the eggs will keep it moist.
Reply:Is your mixture thick enough? Sometimes I find that if there isn't enough flour in the mixture the fruit will sink.

Reply:Try mixing the fruit with some of the flour before you put in with the rest of the ingredients. That should help.
Reply:Remember you must soak the fruit overnight in luke warm water and a little bi-carb.
That will make the fruit soft.
Also, when I bake a fruit cake, I place the batter in the pan and then sprinkle the fruit over. When the cake rises in the oven, it does so "around" the fruit, trapping most fruit in the middle of the cake.
Also, when fruit is added to the batter if you insist on doing that, you must "fold" the fruit in....Do not stir or beat again.
